This was much easier than I ever expected. I installed Divx on the Win7 Media Center machine (just the codecs, I didn’t install any of the other stuff). Then I made sure that the MKV played through Media Center, which it did.

Then I went to the Xbox 360 Media Center, went to “Videos”, and the MKV was shown with the thumbnail image. It just played…no magic involved!
